Lobster with Asparagus

Ingredients

1 lobster
500 g asparagus
1 red onion
2 tbs orange juice
4 tbs sunflower oil
3 tbs balsamic vinegar
1 tbs cream
1 tsp honey
1 tsp mustard
1 lemon
salt and pepper

Instructions

  1. Boil the lobster for 6 min. and allow to cool.
  2. Break off the claws and take out the claw meat. Cut the body lengthwise and remove the meat.
  3. Cut off the woody ends of the asparagus and cook in salted water for 12 min. on a medium heat.
  4. Put oil in a saucepan and sauté the diced onion very lightly.
  5. Add orange juice, oil, vinegar, cream, honey and mustard and mix everything together well.
  6. Serve with lemons.
