Mango Cupcakes

Ingredients

Cupcakes:
100 g butter (at room temperature)
175 g sugar
2 eggs
200 g flour
2 tsp baking powder
125 ml milk
100 g mango purée
12 muffin cups
Topping:
200 g mango purée
50 g icing sugar
75 g mascarpone
150 ml whipping cream

Instructions

  1. Preheat oven to 175°C, 345°F or gas 4.
  2. Add all ingredients to a bowl and combine using a hand mixer.
  3. Spoon into the muffin cups.
  4. Bake for around 20-25 minutes until a light golden brown.
  5. For the topping, mix together 200 g puréed mango, icing sugar and mascarpone.
  6. Whip the cream until very thick and fold into the mango mixture and cool it.
  7. Once the cupcakes have cooled, decorate with the topping using a piping bag.
