Marble Cake

Ingredients

150 g nougat (solid nut nougat)
200 g butter (at room temperature)
2 tbs rum
250 g sugar
1 tsp vanilla essence
5 eggs
150 g mascarpone
400 g flour
3 tsp baking powder
12 tbs cream
8 tbs milk
icing sugar

Instructions

  1. Melt the nougat in a double boiler over a low heat.
  2. Cream butter, rum, sugar and vanilla.
  3. Add each egg one at a time and then the mascarpone, stirring as you go.
  4. Combine flour and baking powder.
  5. Stir in the flour combination, cream and 4 tbs milk by degrees, alternating between wet and dry ingredients.
  6. Add half the mixture to a greased bundt tin.
  7. Add the nougat and the other 4 tbs of milk to the rest of the mixture.
  8. Add to the cake tin and draw a fork through the mixture in a spiral pattern. This will create the marbled effect later.
  9. Preheat oven to 160°C, 320°F or gas 3. Bake for 60 min.
  10. Dust with icing sugar.
