Oven-Baked Halibut

Servings: 4

Ingredients

950 g fish (halibut)
1 yellow pepper
10 cherry tomatoes
1 onion
3 tbs olive oil
1 tbs balsamic vinegar
1 tsp mixed herbs
80 g pitted black olives
4 tbs parsley
salt and pepper
lemon

Instructions

  1. Dice the pepper, tomatoes and onion.
  2. Chop the parsley.
  3. Preheat oven to 200°C, 390°F or gas 6.
  4. Fry the onion and pepper in a pan with oil, then add vinegar, herbs and olives and cook for another 10 min.
  5. Season with salt and pepper and add some of the parsley.
  6. Cut the halibut into strips 3 cm wide.
  7. Spread everything on a baking tray, lay the fish on top, pour a bit of oil over the fish and season with salt and pepper.
  8. Bake for 25 min. and serve with parsley and lemon.
