Prawn Salad

Ingredients

Salad:
mixed salad greens
1 small tin of sweetcorn
16 olives
100 g cherry tomatoes
lime juice
200 g cooked prawns
4 tinned anchovy fillets
Dressing:
2 tbs olive oil
1 tbs balsamic vinegar
1 tsp mustard
1 tsp honey
1 clove of garlic
salt and pepper

Instructions

  1. Wash and tear the lettuce. Drain the sweetcorn.
  2. Cut the olives and tomatoes in half.
  3. Pour a little lime juice over the prawns.
  4. Cut the anchovy fillets into smaller pieces.
  5. For the dressing, mix together olive oil, balsamic vinegar, mustard, honey, 1 crushed garlic clove. Add salt and pepper to taste.
  6. Toss all salad ingredients together and serve.
