Pancakes with Apple Compote

Ingredients

Apple Compote:
1 kg apples
200 ml apple juice
3 tbs lemon juice
150 g sugar
Pancakes:
3 eggs
200 ml milk
100 g flour
1/2 tsp baking powder
a pinch of salt
1 tsp vanilla essence
2 tbs sugar
butter
raisins (optional)

Instructions

  1. Peel, core and dice the apples.
  2. Cook the apples, apple juice, lemon juice and 100 g sugar in a saucepan for 10 min. to make the compote.
  3. For the pancake batter, mix the eggs, milk, flour, baking powder, salt, vanilla and 50 g sugar.
  4. Leave the batter to rest for 12 min.
  5. Cook the pancakes in a pan with butter and cover with apple compote and optionally with raisins.
