Pasta Bolognese Casserole

Cook Time: 10 mins

Servings: 4

Ingredients

400 g mince
250 g pasta (e.g. macaroni)
1 onion
3 tomatoes
2 tbs tomato paste
200 g cheese
200 ml stock
2 sprigs of thyme
1 tbs oil
salt and pepper

Instructions

  1. Cook the pasta until al dente and drain.
  2. Dice the onion.
  3. Cook the onion, garlic and mince in a pan with oil.
  4. Dice the tomatoes and add to the pan along with the tomato paste and thyme sprigs.
  5. Bring to the boil and then deglaze with the stock.
  6. Add salt and pepper to taste and remove the thyme.
  7. Mix with the pasta, place in a casserole dish and put cheese on top.
  8. Preheat oven to 200°C, 390°F or gas 6 and bake the casserole for 10 min.
