Penne with Tomato Pesto

Ingredients

500 g penne pasta quills
15 olives
250 g sundried tomatoes
1 tsp oregano leaves
4 tbs tomato paste
250 ml olive oil (1 cup)
3 cloves of garlic
sea salt
black pepper
basil

Instructions

  1. Blend the tomatoes, garlic and oregano leaves in a food processor with the oil and tomato paste.
  2. Season with salt and pepper and leave for at least 1 hour to absorb flavour.
  3. Cook the pasta and serve mixed with olives and the tomato pesto.
