Peppers Stuffed with Mince

Servings: 4

Ingredients

6 peppers
3 tomatoes
2 onions
200 g feta
500 g mince
oil
2 tbs tomato paste
salt
pepper
oregano
1 tin of tomatoes
2 tsp cream
1 tsp vegetable stock

Instructions

  1. Wash the peppers, cut off a "lid" at the stem end and remove the seeds.
  2. Wash and dice the tomatoes.
  3. Dice the onions and feta.
  4. Fry first the onions and then the mince in oil.
  5. Add the tomatoes, feta and 2 tbs of tomato paste.
  6. Add salt, pepper and oregano to taste.
  7. Stuff everything into the peppers.
  8. Place the peppers in an oven dish.
  9. Pour the tinned tomatoes round the stuffed peppers.
  10. Season everything with salt, pepper and oregano. Add 2 tsp cream and 1 tsp stock.
  11. Preheat oven to 180°C, 350°F or gas 4 and cook for 30 min.
