Potato Salad with Gherkins

Servings: 4

Ingredients

1 kg waxy potatoes
1 red onion
125 ml vegetable stock
salt and pepper
caraway seeds
a pinch of sugar
4 tbs balsamic vinegar
6 tbs sunflower oil
100 g mayonnaise
3 gherkins
2 tbs mayonnaise

Instructions

  1. Cook the potatoes for 30 min. in salt water and then peel.
  2. Dice the onion finely and heat the stock.
  3. Mix the onion, stock, salt, pepper, caraway, sugar, vinegar and oil together in a bowl.
  4. Finely chop the cooled potatoes and fold in the mayonnaise.
  5. Leave to sit for 2 hours to infuse and then stir again.
  6. Slice the gherkins, add to the salad and then a bit more mayonnaise if desired.
