Pumpkin Soup

Servings: 4

Ingredients

2 pumpkins
2 cloves of garlic
oil
2 1/2 l stock
4 potatoes
2 cm ginger root
salt
pepper
cayenne pepper
curry powder
cinnamon
nutmeg
250 ml cream (1 cup)

Instructions

  1. Remove pumpkin seeds and cut the pumpkins into chunks.
  2. Cook the pumpkin pieces with finely cut garlic in oil in a pan.
  3. On another element, bring the stock to the boil in a pot and then add the pumpkin.
  4. Peel the potatoes, chop and add.
  5. Add the chopped ginger.
  6. Cook everything for 25 min.
  7. Purée and simmer for another 3 min.
  8. Add seasoning and cream and purée once more.
  9. Time permitting, leave everything to sit for a few hours to absorb flavours.
  10. Goes well with baguette, a splash of cream and a tsp of pumpkin seed oil.
