Quinoa and Pepper Salad

Cook Time: 15 mins

Servings: 4

Ingredients

1 cup quinoa
vegetable stock
1/2 cucumber
1 yellow bell pepper
1 red bell pepper
1 garlic clove
2 tbs olive oil
salt and pepper
freshly ground chilli
1 1/2 bunches of parsley

Instructions

  1. Rinse the quinoa under hot water in a sieve.
  2. Bring water to the boil in a pot with the vegetable stock.
  3. Cook the quinoa in the pot for 15 minutes, drain, and leave in a bowl to cool.
  4. Chop the cucumber and peppers and add.
  5. Add finely chopped garlic and oil.
  6. Add salt, pepper, chilli and parsley to taste.
