Rice Pudding with Cinnamon and Sugar

Servings: 3

Ingredients

1 l milk
a pinch of salt
125 g rice
1 fresh egg, separated
sugar
1 tbs custard powder
cinnamon

Instructions

  1. Setting aside 5 tbs milk for later, add salt to the rest of the milk and bring to the boil.
  2. Cook the rice in the milk on a low heat, stirring continuously until the rice is soft.
  3. Mix together the 5 tbs milk, egg yolk, 2 tbs sugar and custard powder and then add to the rice.
  4. Bring to the boil again and then leave to cool.
  5. Beat the egg whites and fold in.
  6. If the pudding is too thick, add milk.
  7. Sift cinnamon and sugar over the top.
