Rigatoni with Shrimp

Ingredients

500 g rigatoni (or penne)
200 g cooked shrimp
lettuce
cherry tomatoes
1 onion
1 clove of garlic
1 tsp butter
200 g cream
1/2 cup vegetable stock
2-3 tbs lemon juice
salt
pepper

Instructions

  1. Dice the onion and cut the garlic into fine pieces.
  2. Fry both in a pan with butter.
  3. Cook the pasta.
  4. Add lemon juice, cream, vegetable stock, salt and pepper to the pan and simmer.
  5. Add the shrimp and briefly turn up the heat.
  6. Arrange the pasta with the sauce and a salad of washed lettuce and quartered tomatoes.
