Roast Pork with Bread Dumplings

Ingredients

1 kg pork (with scored rind)
salt and pepper
paprika
butter
1 onion
1 tomato
250 g broken bread
220 ml milk
1 egg
2 onions
1 bunch of parsley

Instructions

  1. Dress the meat with salt, pepper and paprika.
  2. Place small chunks of butter on the bottom of the roasting dish and set the pork on top. Dice 1 onion and 1 tomato and place the cubes in the space between the meat and the roasting dish.
  3. Roast at 200°C, 390°F or gas 6 for 2 hours.
  4. While it cooks, prepare the dumplings.
  5. Put the broken bread in a bowl, pour boiled milk over the top, leave to rest for 10 min. and then add the egg.
  6. Add finely chopped onion and parsley and season with salt and pepper.
  7. Knead everything, shape into about 5 balls and cook in salted water for 20 min.
  8. After the roast has been in the oven for 2 hours, place the roast in the upturned lid and leave in the oven for another 10 min. until the crust is nicely crisp.
  9. While it is doing that, transfer the sauce from the roasting dish to another dish. The sauce sticking to the sides can be removed using the hot water from the dumplings and a wooden spoon. You can also add 1-2 tsp of soup stock and a bit of cream if desired.
