Roulades with Herbs

Servings: 4

Ingredients

4 beef roulades
1 onion
2 tbs rosemary
2 tbs thyme
2 tbs sage
1 tbs oregano
4 tsp olive oil
4 potatoes
4 tomatoes
1 bottle red wine
1 vegetable stock cube
salt and pepper
toothpicks

Instructions

  1. Season the roulades on both sides with salt and pepper.
  2. Finely chop the onion and herbs and fill the roulades.
  3. Roll the roulades up and affix with two toothpicks.
  4. Cook in a pot with oil.
  5. Cut the potatoes and tomatoes into quarters and add to the pot.
  6. Add as much red wine as needed until only half of the roulades are visible.
  7. Add the stock cube and put the lid on.
  8. Simmer on a low heat for around 1 hour.
  9. Add salt and pepper to the sauce to taste.
