Shrimp-Filled Spring Rolls

Ingredients

16 sheets of spring roll pastry, frozen, approx. 20x20 cm
500 g shrimps
1 red chilli pepper
3 spring onions
1 blade lemongrass
2 cloves of garlic
1 tsp lemon zest
2 tsp shrimp paste
cooking oil
3 tbs fish sauce
1 tbs sugar
salt
sweet chilli sauce

Instructions

  1. Defrost the spring roll sheets.
  2. Cut the shrimps into very small pieces.
  3. Finely chop the chilli, spring onion, lemon grass and garlic.
  4. Add the lemon zest.
  5. Mix everything with the shrimp paste.
  6. Cook in a pan or wok with oil.
  7. Season with fish sauce, sugar and salt.
  8. Place some filling in the middle of each pastry sheet.
  9. Fold one of the corners over the filling.
  10. Fold in at each end and roll everything up.
  11. Fry for 4 min. until golden brown and serve with sweet chilli sauce.
