Spaghetti with Shellfish

Preparation Time : 20 mins

Servings: 4

Ingredients

400 g spaghetti
500 g shellfish (e.g. mussels)
50 ml olive oil (3 1/4 tbs)
3 cloves of garlic
500 g tinned tomatoes
salt and pepper
1 bunch of parsley

Instructions

  1. Wash the mussels, discarding all broken and open shells.
  2. Heat in a covered saucepan with 3 tbs oil until they open.
  3. Add the rest of the oil and crushed garlic and sauté.
  4. Add the tomatoes and salt and pepper to taste.
  5. Reduce everything for 10 min. and then add the chopped parsley.
  6. Cook the pasta and serve with the sauce. Discard the unopened shells.
