Spanish Omelette

Ingredients

4 potatoes
1 onion
cooking oil
1 pepper
7 eggs
salt and pepper
paprika
nutmeg

Instructions

  1. Wash and peel the potatoes and cut into small pieces.
  2. Dice the onion.
  3. Fry the onion and potatoes in a pan with oil, remove from the oil and set aside.
  4. Cut the pepper into small pieces.
  5. Whisk the eggs with salt, pepper, paprika and nutmeg.
  6. Add the sliced pepper, potatoes and onion.
  7. Cook the omelette on both sides in a pan with a bit of oil. (Tip: use a dinner plate to flip it.)
