Spring Herb Soup

Servings: 4

Ingredients

250 g herbs (e.g. wild garlic, cress, parsley, chives)
3 shallots
4 tbs butter
a bit of flour
1 l vegetable stock
salt
pepper
125 ml cream (1/2 cup)
125 ml soured cream (1/2 cup)

Instructions

  1. Wash the herbs and cut finely.
  2. Chop the shallots.
  3. Fry the shallots in butter, add herbs, and add a little flour to thicken.
  4. Pour in the vegetable stock and season with salt and pepper.
  5. Bring to the boil, then purée.
  6. Add the cream and soured cream.
  7. Goes well with baguette.
