Peppers Stuffed with Mince and Rice

Servings: 4

Ingredients

125 g rice
6 bell peppers
3 tomatoes
2 onions
500 g mince
oil
2 tbs tomato paste
salt
pepper
oregano
200 g cheese (e.g. gouda)
fresh herbs (e.g. parsley or coriander)

Instructions

  1. Cook the rice.
  2. Wash the peppers, cut off the stem end to use as a lid, and remove the seeds.
  3. Wash the tomatoes and chop into small pieces.
  4. Dice the onions.
  5. Cook the onions first and then the mince in oil.
  6. Add the tomatoes and tomato paste.
  7. Add salt, pepper and oregano to taste.
  8. Mix everything with the rice and use the mixture to stuff the peppers.
  9. Sprinkle grated cheese on top.
  10. Place the peppers on an oven tray.
  11. Bake in an oven preheated to 180°C, 350°F or gas 4 for 30 minutes.
  12. Garnish with fresh herbs.
