Strawberry Cupcakes

Ingredients

5 eggs
220 g sugar
1 tsp vanilla essence
220 g flour
1/2 tsp baking powder
250 ml whipping cream
500 g strawberries
strawberry jam

Instructions

  1. Beat eggs, sugar and vanilla together until fluffy.
  2. Combine flour and baking powder before folding in.
  3. Spoon into baking cups.
  4. Preheat oven to 175°C, 350°F or gas 4 and bake for 10 min.
  5. Top the cakes with whipped cream and strawberry halves.
  6. Warm and sieve the jam.
  7. Drizzle the sieved jam over the top.
