Teriyaki Fish with Asparagus

Ingredients

350 g salmon fillets
salt
white pepper
4 tbs oil
4 cloves of garlic
80 ml sake (5 1/3 tbs)
120 ml rice wine (1/2 cup)
80 ml soy sauce (5 1/3 tbs)
400 g asparagus

Instructions

  1. Wash the salmon and pat dry. Season with salt and pepper.
  2. Put oil in a pan and cook the peeled garlic cloves.
  3. Remove the garlic cloves and cook the fish in the same oil for around 3 min. on each side.
  4. Carefully deglaze with sake.
  5. Mix together the rice wine and soy sauce, then add and cook everything to reduce.
  6. Cut off the woody ends of the asparagus and peel if needed. Tie 5 asparagus spears together with cooking twine and cook in water with a pinch of salt for around 15 min.
  7. Arrange the fish on plate, pour on the sauce and serve with the asparagus.
