Tortiglioni with Nut Pesto

Ingredients

25 g walnuts
25 g pine nuts
25 g salted pistachios
50 g black olives (not dried)
50 g parmesan or pecorino
60 ml olive oil
1 tsp green peppercorns from a jar
3 tsp lemon juice
1 tbs tomato paste
1 garlic clove
600 g tortiglioni pasta
salt

Instructions

  1. Combine everything except the pasta in a blender to form a pesto.
  2. Cook the pasta and serve with the pesto immediately.
