Trout Fillets with Herbs

Servings: 4

Ingredients

8 trout fillets (e.g. rainbow trout)
1 shallot
butter
mixed herbs (e.g. basil, parsley, chives)
100 ml fish stock (1/4 cup)
1 lemon
salt
pepper

Instructions

  1. Chop the shallot and fry in butter with some of the herbs.
  2. Deglaze with the stock and add the juice of half a lemon to the sauce.
  3. Add salt and pepper to taste.
  4. Wash the fillets in cold water and pat dry.
  5. Dress the fillets with salt, pepper and lemon juice.
  6. Fry the fillets in a pan with butter on a medium heat for 2 min. on the skin side, then for 3-4 min. on the other side.
  7. Remove the fillets, cover with herb sauce and garnish with herbs and sliced lemon.
