Heat up the chip pan, precook the potatoes at 160°C (320°F) for 15 min., then remove and hang to drain.
Fry again at 180°C (350°F) for 4 min. until crispy.
Hang to drain and season with salt.
If you'd like to make chips in the oven, coat the potatoes in oil, lay out on a baking tray and fan bake at 190°C on the lower rack or cook on the upper rack at 230°C (no fan), 445°F or gas 8 for 30 min.
