Minted Yoghurt Dressing

Ingredients

1 lime
2 garlic cloves
16 mint leaves
300 g Greek yoghurt
2 tbs olive oil
2 tsp sugar
salt, pepper, cayenne pepper

Instructions

  1. Wash and dry the lime. Zest off 1 tsp of lime peel.
  2. Squeeze the lime to get 1 tbs of juice.
  3. Chop the garlic finely.
  4. Chop the mint leaves into small pieces.
  5. Mix all ingredients thoroughly. Season with salt and pepper to taste.
  6. Refrigerate for several hours to absorb flavour.
  7. Serve on a salad of your choice.
