Penne all'Arrabbiata

Preparation Time : 45 mins

Servings: 4

Ingredients

400 g penne pasta quills
100 g cherry tomatoes
1 tin of tomatoes
100 g bacon
2 red chillies
1 onion
2 cloves of garlic
2 tbs butter
olives
1 bunch of parsley
50 g Parmesan, freshly grated
salt
pepper
basil

Instructions

  1. Cut the bacon into strips, dice the cherry tomatoes, cut the onion finely, finely slice the garlic and chillies.
  2. Parboil the pasta for just 6 min. and drain.
  3. Sauté the bacon and onion in a pan with butter.
  4. Add the tinned tomatoes, chillies and garlic.
  5. Season with salt and pepper and simmer for a while.
  6. Add the pasta and continue cooking until the pasta is al dente.
  7. Sprinkle with tomatoes, olives, parsley, basil and Parmesan before serving.
