Semolina Dumpling Soup

Ingredients

60 g softened butter
2 eggs
130 g wheat semolina
salt, pepper, nutmeg
1 tsp marjoram
2 l vegetable stock
chives

Instructions

  1. Mix the butter, eggs and semolina in a bowl using a hand-mixer to form a dough.
  2. Season with salt, pepper, nutmeg and marjoram.
  3. Leave the dough to rest for 15 min.
  4. Bring the stock to the boil.
  5. Drop teaspoon-sized pieces of the dough into the stock.
  6. Cook on a low heat for 20-25 min.
  7. Garnish with chives.
