Thai Chicken Burgers

Ingredients

4 hamburger buns
500 g chicken mince
2 onions
2 tbs Thai red curry paste
2 tbs fish sauce
1 tbs soy sauce
5 tbs sweet chilli sauce
1 egg
2 tbs breadcrumb mix
coriander leaves
3 tbs oil
1 cucumber
1 iceberg lettuce
1 lime

Instructions

  1. Cut an onion into fine pieces and mix with the chicken mince, curry paste, fish sauce, soy sauce, sweet chilli sauce, egg, breadcrumb mix and chopped coriander leaves.
  2. Shape into burger patties.
  3. Cook in a pan with oil.
  4. While the patties cook, heat the buns in the oven at 200°C, 390°F or gas 6 for around 2 min.
  5. Wash the lettuce and cut the other onion and the cucumber into rounds.
  6. Put everything inside the hamburger buns with a dash of sweet chilli sauce and squeeze a few drops of lime juice over the patties.
