Vege Burgers

Ingredients

4 hamburger buns
2 potatoes
1 carrot
40 g white mushrooms
75 g kidney beans (tinned)
40 g peas
1 tbs breadcrumb mix
salt
cayenne pepper
lettuce
1 tomato
1 avocado
2 tbs lime juice
1/4 onion

Instructions

  1. Cook, peel and dice the potatoes.
  2. Finely dice the carrot and mushrooms.
  3. Blend the kidney beans, potato, carrot, mushrooms and peas in a food processor.
  4. Stir in the breadcrumb mix, salt and cayenne pepper.
  5. Shape into burger patties and sear the patties on each side.
  6. While that is happening, toast the buns in the oven at 200°C, 390°F or gas 6 for around 2 min.
  7. Wash the lettuce and slice the tomato into thin wedges.
  8. To make the dressing, dice the avocado, drizzle with lime juice and mix with finely chopped onion.
  9. Serve the burgers filled with lettuce, vege patties, tomato, and avocado dressing.
